Problem is, the aerodynamics of a high-downforce car will change quite a
bit when it's sliding sideways.  NASCAR cars have even been known to get
airborne in some cases.

At the very least the downforce should be reduced as the car's direction
of travel diverges from its orientation.  It might also be a good idea to
apply aerodynamic drag forces that vary with orientation... or for
NASCAR-style aerobatics, an upward force that peaks when the car is
sliding sideways at top speed.

Or just stick with slippery surfaces and an "off road" theme.  Works for
me! :-)
